Love’s deli rolls
1 Avocado, sliced
Pickled veggies (pre-made or made from scratch)

2 pounds carrots (about 5 medium sized carrots), peeled
2 pounds of daikon radishes (about 2 large daikon), peeled
1 cup plus 4 teaspoons of sugar
2 teaspoons salt
2 1/2 cups white vinegar
2 cups warm water (warm enough to easily dissolve sugar)

1. Season avocado and spread generously onto both sides of your Love’s deli roll.

2. Pickled veggies: Julienne the carrots and daikon radishes. In a bowl add 4 teaspoons sugar, 2 teaspoons salt, and toss together well until the veggies start to soften. Transfer the carrots and daikon to a colander and rinse with cool water and drain well. In a bowl mix together one cup of sugar, white vinegar, and warm water until the sugar dissolves. Pack the veggies mixture into a clean jar and pour over the pickling liquid to cover. Seal and refrigerate.
